Mandel Kransekake

This multi-day shoot was one of my favorites! Kransekake is the official cake of Norway and is served at weddings and other celebrations. My friend Maggie, owner of Mandel Cake, bakes, builds and hand pipes Kransekake in her Hudson Valley kitchen and ships them all over the United States for weddings, birthday parties and even the Norwegian Embassy.
